I was pleasantly surprised when I found fresh cranberries in our local grocery store yesterday. I’ve been waiting for this since last holiday season, because they are a key ingredient for my absolute favorite homemade muffins–Gluten Free Cranberry Orange Muffins
I don’t usually post recipes on my blog, but since I’m doing a Fall series, I thought it appropriate. If you’re not into making your own muffins, the best I’ve ever bought actually came from the Fainting Goat Coffee House in Spring Hill, Tennessee (a long way to travel for a muffin unless you already live in the area!)
These muffins have the tartness of fresh cranberries and the sweet tang of orange pulp. If you’re not into gluten-free, just replace the gluten-free flour for regular white flour. If you’re looking for a sugar-free muffin, replace the sugar in this recipe for Erythritol, which won’t change the flavor, or Coconut Palm sugar. The Coconut Palm sugar has a different taste, but it’s a delicious alternative.
